An air fryer is a compact countertop appliance that produces the browned, crisp results of deep frying without submerging food in oil, by circulating air heated to as much as 200 degrees Celsius around food coated in a thin layer of oil in a basket, driving the Maillard browning reaction that also makes deep-fried food crisp. The Dutch engineer Fred van der Weij invented the air fryer in 2006 and brought the idea to Philips, which launched its Airfryer brand commercially in 2010 at the IFA electronics fair in Berlin, using what it called Rapid Air technology, combining radiant heat from above with convection air deflected upward from a shaped base to heat food from multiple directions with a small volume of air.
